- 1 Kg (2 lbs.) of finely minced lamb
- 1 large bunch of parsley
- 2 large onions
- Salt
- Black pepper
- 2-3 tsp. of All Spice
- One egg
- A handful of bread crumbs
- 1/2 Kg ( 1 lb..) potatoes
- 1/2 Kg ( 1 lb..) red tomatoes
- 1 can (1/2 kg)( 1 lb..) of peeled tomatoes (Pelato)

Kufta Potatoes
(Middle Eastern meatloaf with lamb and potatoes) |
- Wash, dry and finely chop parsley and onions
- Mix meat with chopped parsley and onion and add salt, black pepper and
spice
- Knead all very well with the egg and bread crumbs
- Spread a thin layer of butter or ghee on an oven tray
- Spread mix in the oven tray and pierce around the meat layer with your
fingers
- Peel Potatoes then cut them and the tomatoes into slices
- Cover meat with tomato and Potato slices then cover with the peeled
tomato.
- Place in hot oven until cooked
