Ingredients
 
  • 1 Kg (2 lbs.) of finely minced lamb
  •  1 large bunch of parsley
  •  2 large onions
  •  Salt
  •  Black pepper
  •  2-3 tsp. of All Spice
  •  One egg
  •  A handful of bread crumbs
  •  1/2 Kg ( 1 lb..) potatoes
  •  1/2 Kg ( 1 lb..) red tomatoes
  •  1 can (1/2 kg)( 1 lb..)  of peeled tomatoes (Pelato)

Kufta Potatoes
(Middle Eastern meatloaf with lamb and potatoes)

 

 

  1. Wash, dry and finely chop parsley and onions
  2. Mix meat with chopped parsley and onion and add salt, black pepper and spice
  3. Knead all very well with the egg and bread crumbs
  4. Spread a thin layer of butter or ghee on an oven tray
  5. Spread mix in the oven tray and pierce around the meat layer with your fingers
  6. Peel Potatoes then cut them and the tomatoes into slices
  7. Cover meat with tomato and Potato slices then cover with the peeled tomato.
  8. Place in hot oven until  cooked
